Berry Galette

Two in one! Strawberry galette and blueberry galette.

I love making galettes. Mainly because they’re so simple to make yet have such a great visual impact. They look so rustic that they bring forth a sense of nostalgia… even though I never ate galettes as a kid… hahaha. I would recommend this dish to make if you are a beginner baker! You get to work with pie dough while not having to worry so much about the filling. For these two galettes, I made them extremely simple. But you can definitely amp up the flavor with a whole bunch of things such as lemon zest, balsamic vinegar, and herbs.

Ingredients
makes 2 galettes

2 pie doughs
1 pound strawberries
1 carton blueberries
Sugar *adjusted to taste
Corn starch
Vanilla bean paste
Strawberry jam
Blueberry compote
Egg wash
Demerara sugar
*other flavorings can be added such as lemon juice, lemon zest (or any other citrus), cinnamon, and balsamic vinegar.


Directions
Preheat oven to 400 degrees F.

  1. Prepare your fillings.
    -Strawberries: Slice 1 pound strawberries and add them to a bowl. I then add 2 tablespoons sugar, around 1.5 tablespoons corn starch, and 1 teaspoon vanilla bean paste. Mix thoroughly.
    -Blueberries: Add 1 carton of blueberries into a bowl. Then add 2 tablespoons sugar and around 1.5 tablespoons corn starch. Mix thoroughly.

  2. Roll out two pie doughs. The shape is not so important. Place onto a baking sheet with parchment paper placed on top (in case of any leaks).
    -Strawberries: Spread out around 1/4 cup strawberry jam onto the pie dough intended for the strawberries. Then place the strawberry mixture onto the pie dough. Leave ample space at the edge.
    -Blueberries: Spread out around 1/4 cup blueberry compote onto the pie dough intended for the blueberries. Then place the blueberry mixture onto the pie dough. Leave ample space at the edge.

  3. Fold the pie dough over the fruit. Then brush the pie dough with egg wash and sprinkle demerara sugar on top.

  4. Place both galettes into a 400 degrees F oven and bake for 40-45 minutes until the filling is bubbling and the crust is golden brown.

  5. Let cool slightly and enjoy!
