Pumpkin Bread

a fall classic (Bon Appétit recipe)

I have been making this pumpkin bread every year (and sometimes multiple times a year) since 3-4 years ago! I feel like the fresh ginger really makes a difference. Also the bread is so fluffy and moist. I keep going back to it! I’m a sucker for fall spices and this pumpkin bread by Bon Appétit is just so good! I highly recommend you try it out. :D

The pepitas (pumpkin seeds) on top also add such a nice crunch!

This recipe also used freshly grated ginger, which I think adds such a nice touch. But it makes it such a hassle to make! haha.

Ingredients
makes TWO loaves

5 cups all-purpose flour
4 teaspoons cinnamon
4 teaspoons salt
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1/4 teaspoon ground cloves
4 large eggs
2 15-oz. can pumpkin puree
45 grams (about 2 3” pieces) ginger, finely grated
3 cups sugar, plus extra for sprinkling
2 cups olive oil
Raw pumpkin seeds


Directions

  1. Preheat your oven to 325 degrees F.

  2. Add 5 cups flour, 4 tsp cinnamon, 4 tsp salt, 2 tsp baking powder, 1 tsp nutmeg, and 1/4 tsp cloves to a bowl. Whisk together.

  3. In another bowl, crack and loosen 4 large eggs. Add two 15-oz cans of pumpkin puree along with 45 g grated ginger, and 3 cups sugar. Give it all a nice mix. Then add 2 cups olive oil, being sure to mix while you gradually drizzle it all in. Keep mixing until it is all homogenous.

  4. Now add half of the dry ingredients to the wet. Gently fold just until no dry spots remain. Repeat with the other half of the dry ingredients and fold. Just until there are no more white streaks.

  5. Divide your batter evenly between two 9 x 5 inches loaf pans (I used 9 x 3 inches since that was all I had). Smooth the tops with a spatula. Then sprinkle some pumpkin seeds on top along with some sugar.

  6. Bake for 80-90 minutes, using a toothpick to test for doneness. Let the loaf cool and enjoy!

Which do you prefer, banana bread or pumpkin bread? I can’t choose… haha
